Grilled Chicken Alfredo Pizza on Whole Wheat Crust

My sister has a recipe for Chicken Alfredo Pizza that she loves.  It's from a Weight Watchers Cookbook, so, of course, it's good for you.  She asked me to make it the other night for her husband, me and her to eat for dinner.  Well, when I make dinner I usually have to tweak it a little.

Here's my version:

Whole Wheat Crust:






  • FOR THE CRUST (MAKES TWO CRUSTS):

  • 1 teaspoon Active Dry Or Instant Yeast or 1/2 a packet

  • 2 cups All-purpose Flour

  • 2 cups of Whole Wheat Flour

  • 1 teaspoon Kosher Salt

  • ⅓ cups Extra Virgin Olive Oil


Add the yeast to a 1 1/2 cups of warm water.

In a mixer, combine flour and salt. With the mixer running on low speed (with paddle attachment), drizzle in olive oil until combined with flour. Next, pour in yeast/water mixture and mix until just combined.

Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl with a moist towel and set in a warm dry place to let the dough rise.  I like to put mine in the oven (random, I know, but it works).  Let it rise for a couple hours.  When the two hours are up, punch the dough and cut into two pieces.  **It’s best to make the dough at least 24 hours in advance, and 3 or 4 days is even better.


Now for the good stuff!


Chicken Alfredo Pizza:


1 cup of grilled chicken, about 3 or 4 thin pieces of chicken coated in olive oil and salt and pepper, I grilled mine in a grill pan


1/3 cup of light Alfredo sauce


half of a ball of mozzerella, sliced


10 oz of frozen or fresh spinach (I actually didn't use this on my pizza because I don't really like it)


1 clove of garlic, minced


-Preheat the oven to 500 degrees.  Spread the crust in a rimmed baking sheet or on a pizza pan, pushing it to the edges.  Mix the chicken, spinach, and garlic in a bowl.  Spread the Alfredo sauce over the crust.  Add chicken mixture then lay the slices of cheese on the top.  Bake for 10 to 12 minutes.  And ENJOY!




Yes, it looks tasty AND it's good for you.  Granted, I'm not a wheat bread person, so I wasn't too keen on the pizza.  Those of you who like wheat bread will love it I'm sure.

Soon to come

Right now all I want to do is blog, however, my bed is beckoning.  For another 3:30 am wake-up call awaits me tomorrow.  Oh, how I loathe you alarm clock.

Hence, why this post is entitled "soon to come."  I don't want you to think I forget about you, I just have to sleep.  So, my upcoming posts will be AMAZING, or at least I hope.

Welcome and Blackberry Cobbler

Hey and welcome to my blog, whoever you are.

I've been talking about starting a blog for a while and now I've finally done it.  It may not be as cool and fancy as some of the ones I follow using my trusty Google Reader, but it's mine.

You may ask what is this Google Reader and where can I get one.  Check out the link.  Google's greatest invention.  I put all my blogs in it and I only have to go to one place to read all the newest (or oldest) posts.  It makes my life easy.  You are welcome to get Google Reader and add me to it :)

So, that's my long, drawn-out welcome.  Now, the good stuff.

Apparently, my brother-in-law, The Chad, is OBSESSED with blackberry cobbler.  Well, I have "The Pioneer Woman Cooks" cookbook, which just happens to have a great recipe for such a dish.  The other night I was feeling gernerous, so I decided to make some (mostly to butter-up The Chad).

These blackberries were huge.


I love my Kitchen Aid mixer.  My mom has been promising for a long time if I moved out of her house or got married that she would buy me one.  Well, I found one on sale, so I bought it myself, well actually she contributed a little.  I just couldn't wait until I was out of her house.

In the mixer is the self-rising flour, sugar, melted butter, and milk.


After washing the blackberries you have to pat them dry, gently of course.


Pour the yummy batter into the buttered dish.



Sprinkle the large blackberries over the top of the batter.  It's looking better and better.



Then sprinkle with a generous amount of sugar.



Wait impatiently for an hour as it bakes and get golden and crispy and...is it done yet?!



AND there it is!!  Isn't it pretty?!  And I made it and it looks just like the picture in the cookbook.  And because it looked so perfect...



my sister and I had to taste it :)  And it was all worth it.
